Sunday Brunch - Sausage & Peppers Frittata

 Photobucket

This time change really threw me for a loop this morning, and the fact that for once, in a very, very, long time I slept in. I woke up at 9AM excited that I had slept in and decided that today we would have Sunday brunch! I tossed around some ideas of what I could make and settled on the idea of an Italian style Frittata, hence the sausage & peppers. For those of you who have never had or made Frittata, please do not be afraid. Frittata's are fairly easy to make and the combination of ingredients you want to add in are totally up to you and what you have in your refrigerator.  For those of you who have no idea what a frittata is, it's an egg based dish, very similar to a quiche, minus the crust. This frittata took me about 45 minutes to prep and cook, fairly quick and simple, enjoy!

To start your frittata you will need to begin with the key ingredients above, onion, red bell pepper, turkey sausage, and eggs. You will also need:

- 3 Tablespoons of Extra Virgin Olive Oil
- 1/2 cup of ricotta cheese
- 1/2 a cup of freshly grated Parmesan cheese
- 2 to 3 sprigs of fresh Italian parsley (finely chopped)
- 3 to 4 drops of Louisiana Hot Sauce
- Salt and pepper to taste
- 1/4 cup of milk

Photobucket
Begin by slicing half of your onion into large thin strips and set them aside.

Then, slice one red pepper into thin 1 inch strips, set aside with onions.

Photobucket
Thinly slice the sausage.

Photobucket
In an oven safe pan add in 3 tablespoons of extra virgin olive oil, and heat on medium/high.

Photobucket
When the oil has warmed up add in the onions and the peppers.

Photobucket
Add in a pinch of salt and pepper and cook until the peppers are soft and the onions begin carmelizing.

Photobucket
Add in the sausage pieces and stir together well. Cook for another 3-5 minutes stirring frequently to prevent sticking.

Photobucket
Meanwhile add eight large eggs to a mixing bowl and whisk together.

Photobucket
Whisk in salt and pepper to taste and 3-4 drops of Louisiana hot sauce.

Photobucket
Next, you will need 1/ 2 a cup of ricotta cheese, and 1/4 cup of milk (I used 2%).

Photobucket
Whisk the ricotta cheese in well.

Photobucket
Meanwhile your sausage and peppers should be ready.

Photobucket
Pour the egg mixture in over the sausage and peppers.

Photobucket
Immediately stir the ingredients together, then let the frittata cook.

Photobucket
Yum! Let the egg mixture cook until it begins to set on the bottom and sides of your pan.

Photobucket
Place the pan in a preheated oven set at 450 degrees and bake for 15 minutes until the eggs have puffed up and cooked through. To test the frittata insert a butter knife in the center, the knife should come out clean.

Photobucket
Ta-Dah!

Photobucket
Sprinkle the top with a 1/2 cup of freshly grated Parmesan cheese.

Photobucket
Place the frittata back in the oven for 3-4 minutes to melt cheese.

Photobucket
Remove from the oven and garnish with some chopped fresh parsley.
Enjoy!

  1. That looks amazing and 45 mins isn't that long. It would take longer to leave the house, find a spot order your food and then drive home. Vs eating at home on such a beautiful day!
