Serves 6
To start your frittata you will need to begin with the key ingredients above, onion, red bell pepper, turkey sausage, and eggs. You will also need:
- 3 Tablespoons of Extra Virgin Olive Oil
- 1/2 cup of ricotta cheese
- 1/2 a cup of freshly grated Parmesan cheese
- 2 to 3 sprigs of fresh Italian parsley (finely chopped)
- 3 to 4 drops of Louisiana Hot Sauce
- Salt and pepper to taste
- 1/4 cup of milk
Begin by slicing half of your onion into large thin strips and set them aside.
Then, slice one red pepper into thin 1 inch strips, set aside with onions.
Thinly slice the sausage.
In an oven safe pan add in 3 tablespoons of extra virgin olive oil, and heat on medium/high.
When the oil has warmed up add in the onions and the peppers.
Add in a pinch of salt and pepper and cook until the peppers are soft and the onions begin carmelizing.
Add in the sausage pieces and stir together well. Cook for another 3-5 minutes stirring frequently to prevent sticking.
Meanwhile add eight large eggs to a mixing bowl and whisk together.
Whisk in salt and pepper to taste and 3-4 drops of Louisiana hot sauce.
Next, you will need 1/ 2 a cup of ricotta cheese, and 1/4 cup of milk (I used 2%).
Whisk the ricotta cheese in well.
Meanwhile your sausage and peppers should be ready.
Pour the egg mixture in over the sausage and peppers.
Immediately stir the ingredients together, then let the frittata cook.
Yum! Let the egg mixture cook until it begins to set on the bottom and sides of your pan.
Place the pan in a preheated oven set at 450 degrees and bake for 15 minutes until the eggs have puffed up and cooked through. To test the frittata insert a butter knife in the center, the knife should come out clean.
Ta-Dah!
Sprinkle the top with a 1/2 cup of freshly grated Parmesan cheese.
Place the frittata back in the oven for 3-4 minutes to melt cheese.
Remove from the oven and garnish with some chopped fresh parsley.

That looks amazing and 45 mins isn't that long. It would take longer to leave the house, find a spot order your food and then drive home. Vs eating at home on such a beautiful day!
